I'm new to the zone, so I know my measurements are off, and I think I am adding too much protein. (Editor's note: I'll be happy to Zone this for you. Let me know if the recipe works with this ratio of ingredients.)

3 Block Meal

Ingredients:
1/2 cup egg substitute
1 tomato, chopped
Italian spices, such as oregano and basil
crumbles or tofu cut small
Spinich (optional)
1 cup asparagus
1 zucchini, sliced thin
Any other veggies that sound good
1 ounce low-fat Cheese shredded
1 orange

Instructions:
Cut up tomatoes, add Italian spices such as oregano and basil. Take a large, square, flat frying pan, heat med-high and spray with Pam. Pour egg substitute and quickly rotate pan until there is a very thin layer. This will be used where the traditional pasta noodles are. (I call them ZONoodlEs.) Cut to fit small casserole dish. Layer ZONoodlEs, with tomatoes, veggies, and protein crumbles if you want them. Sometimes it helps to steam veggies a little, but you still want them semi-raw. Make top layer tomatoes, put cheese on top, bake at 350 until warmed and veggies are soft.
