Migas con Sausage Salsa

This is a typical Mexican breakfast, or sometimes supper, for two.

2 - 4 Block Meals

Ingredients:
2 corn tortillas – 36g Carb
1 Tbsp. olive oil
1 cup egg substitute
2 turkey sausage - 28g Protein
1 Tbsp. olive oil
½ cup chopped fresh tomato
¼ cup chopped sweet onions
2 chopped green onions
2 halves, chopped pickeled jalapeno, to taste
1 garlic clove minced, to taste 1 Tbsp. tomato sauce
1/3 cup water
salt and pepper,to taste
2 pieces fruit (apple, orange) or 1 cup mixed berries

Instructions:
Add chopped turkey and 1 T. olive oil to a warming skillet. Brown and stir sausage. Turn heat to medium and add onions, jalapenos, garlic, tomatoes. Saute for 2-4 minutes. Add tomato sauce and water. Reduce heat to simmer.

While salsa is simmering, chop tortillas. Add 1 T. oil to skillet and heat. Add tortillas and brown until crisp. Add sub. eggs and stir. Cook until done. Add salt and pepper to taste. Serve migas with salsa over the migas or to the side.

To balance add fruit
