When I began following the Zone nearly 11 years ago, I created this recipie, and it is still my favorite breakfast.
2 egg whites
1/8 tsp cream of tarter
2 tbsp rolled oats
2 scoops Zone protein powder
dash each of cinnamon and nutmeg
2/3 tsp olive oil
Choice of 1 cup blueberries or 1 apple chopped
Beat egg whites stiff; add cream of tarter. Process oatmeal in blender 2 seconds and add to egg whites. Stir in remaining ingredients, then fold in fruit. Cook on a teflon or a cast iron griddle until golden brown. Makes three small Zone balanced pancakes that do not need butter or syrup.
