Seven-Minute Breakfast

Ingredients:
1 slice lean Canadian bacon
1 whole egg
2 egg whites

Instructions:
Quick-fry the Canadian bacon in a dry non-stick skillet. Remove to plate. Lightly spray pan with olive oil spray. Fry or scramble the eggs. (I cook the extra egg yolks for my dog) Serve with one slice of lightly toasted Ezekial or Alvarado bread drizzled with 1 teaspoon olive oil For the extra 1 block of carbs, choose 1/2 pear or your favorite fruit block. I have this down to a science. While waiting for the bacon to fry, I fix my herb tea and take my supplements. Once the eggs go on, I pop the bread in the toaster. This is so close to a "traditional" breakfast that my friends and family don't even realize that it's a Zone breakfast. (NOTE: Some of them prefer OJ to the fresh fruit, but I only give them 1/3 cup). ENJOY!
